WHere is a simplified version of a beverage found on the seasonal cocktail list. This is a large-volume pre-mixed that is bursting full of essence of the festive period, which makes it ideal for hosting a holiday party. Reserve the remaining cordial you can use for brunch beverages, desserts, or to mix another batch of the drink.

For the Clementine Cordial (makes 750ml)
300ml fresh clementine juice
200ml fresh lemon juice
500g granulated sugar
For the Premix (makes 850ml, to serve 10)
400ml good quality vodka
100ml dry gin
150ml peach schnapps
200ml clementine syrup (from the recipe above)
A few cranberries, for garnish
Mandarin essential oil, for finishing
Directions
For the Cordial: Combine every items in a pan, heat until it reaches a light boil, agitating to dissolve. Then, turn off the burner and let it to cool fully. Pour to a sterilised bottle, seal keeping it in the refrigerator, it will last for about a month.
Preparing the Premix: Mix the specified liquid ingredients in a sizeable container, leave to sit for 60 minutes, then filter it , ideally through cheesecloth, so it's completely strained.
For serving: Pour 85ml of your premix into a cocktail shaker containing ice, and stir carefully for about 60 seconds to chill. Strain to a cold coupe glass or a similar vessel, garnish with the cranberries adding the final touch by giving it a light spray of mandarin oil above the glass.
